I've fallen head over heels for a vegan! I'd like to start planning meals that I can make for her so that every time I'm not scrambling to put the pieces together. I have lots of ideas, but my eagerness is getting the best of me and making me a bit indecisive.
I'm making dinner for her tomorrow night. I've been contemplating making a Moroccan tagine with chickpeas, carrots, cauliflower and kabocha squash, but I don't know what to serve as a side, other than couscous. Possibly some sort of sautéed green? I was also contemplating these Deborah Madison wine glazed lentils:
Or maybe a braised cabbage with chestnuts. (Thanks for the initial suggestion, Trockwood.)
