Hi all, I was wondering whether there was an advanced macarons class anyone on here would recommend? I self taught myself how to make macarons about a year ago and have made about 80 batches so far. I'd love to take a class where it was invented. If anyone has one they recommend that would be amazing.
I would love to take one from someone who has maybe worked at a well known pastry shop and knows all the tricks to dealing with these finicky cookies.
So far, I've found Le Foodist has an advanced course (but in looking at their pictures - the meringue doesn't come out that good looking and it appears I can see hollows (the ultimate evil!). I also found Alain Ducasse cooking school - although they wont have an english class during my time in Paris.
If anyone has any other recs - that'd be swell!
