6 hour layover in HK

Yet another of these posts. I have read through similar posts so I've done my homework somewhat. I have a six hour layover in HK en route to Bangkok next month and I plan to leave the airport. I've been to HK before so I've seen a couple of the popular tourist sites; Victoria Peak and Kowloon. I'm more interested in grabbing a brunch type meal somewhere and just walking around a bit, maybe a little shopping. My flight arrives at 6 a.m. on a Sunday and departs at noon. Any suggestions?
