Parisian Sweets for Mother's Day

The easiest of the bunch to make, croquants are common in Parisian bakeries and ice cream shops, even small grocers. These caramelized meringue rounds studded with chunks of almonds contain only five ingredients: egg whites, sugar, almonds, flour, and salt. Unlike with many French pastries, there is no technique to master here. Just stir, drop, bake, and eat.
