An Ode to Tomatoes

Oh tomatoes, they're wonderful raw, roasted, grilled, stewed, blended, crushed, diced, and sliced. And with the end of summer, these beauties are fleeting. Our recipes here highlight this fruit that disguises as a vegetable. These simple slow-roasted tomatoes are delicious on hamburgers, pizza, sandwiches, or salad. The tomato confit happens after you roast them for more than 45 minutes and they get shriveled and dark red.
