The fact that these smoky grilled shrimp tacos are gluten-free is secondary to their absolute deliciousness. It's really an afterthought because we didn't have to do anything different to make these beauties gluten-free. First, make the salsa in all its avocado, tomato, corn, cilantro, serrano chile, lime juice, and scallion glory. Then you toss those (sustainably raised or caught) shrimp in chipotle powder, cumin, salt, lime juice, and olive oil. Grill, and wrap it all up in warm corn tortillas. Serve them at lunch or dinner. Or heck, brunch. They're that good.
