Chorizo sausage, mexican

Mexican chorizo is made from coarsely ground fresh pork mixed with garlic, chiles, and other spices. Don’t confuse it with Spanish chorizo, which is usually dry-cured and ready-to-eat. When fresh, this sausage must be cooked. The casing is usually removed and the sausage crumbled before cooking. It may also be found dry-cured.
