Parsley is fine as a green garnish, but used in quantity it’s delicious. Chowhounds’ favorite parsley-intensive dishes include tabbouleh and Argentine chimichurri sauce. They also use it as a green in salads and sandwiches, and make it into pesto. JTilCT makes a salad of chopped parsley and diced tomato dressed with garlic, olive oil, and lemon juice.
ipsedixit mixes chopped parsley and garlic with soy sauce and refrigerates the mixture overnight, then drizzles in sesame oil and uses it as a topping for noodles or rice. And lunchslut recommends this parsley-heavy Persian herb frittata called kuku sabzi.
