If bacon is on your list of vices, there is good news brewing. The meat may be a bit more healthful than you think, and it is better to cook it in the microwave oven, some scientists claim. A study concludes that preparing bacon in a microwave oven instead of a skillet can avoid producing cancer-causing substances called nitrosamines.
- 3 tablespoons brown sugar
- 1/2 teaspoon dry mustard
- 2 tablespoons vinegar
- 1/2 pound thick-sliced bacon
1Mix sugar, mustard and vinegar in 2-cup measure. Microwave with 650 watts for 30 seconds to dissolve sugar; stir.
2Put bacon strips, four at a time, on microwave-proof baking rack. (Don`t use paper towels; the marinade will stick.) Baste both sides of bacon heavily with the sugar mixture. Microwave with 650 watts for 3 minutes.
3Turn bacon and baste heavily again. Microwave with 650 watts for 2 to 3 minutes more, until bacon is almost dry but not burned and the marinade forms a light crust. Repeat with remaining bacon.
