Ingredients (14)

  • 2 lbs ground beef
  • 1 (8 oz.) package frozen spinach, thawed
  • 2 eggs
  • 1 cup bread crumbs
  • 3 tbs Worcestershire sauce (or soy)
  • 1 tbs cumin
  • 1 tbs paprika
  • salt and pepper to taste
  • 1/4 c ketchup
  • 1/4 cup brown sugar
  • 1 tbs Worcestershire sauce
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp paprika

Sneaky BBQ Meatloaf

While this meatloaf definitely doesn’t qualify as healthy, it does have the added nutrients of spinach and is super delicious. This meatloaf is nice and moist, and the crust on top adds a nice sticky layer of texture and flavor.

Instructions

  1. 1Preheat oven to 375
  2. 2Squish together first 8 ingredients (you’ll have to get your hands dirty for this one). Place in a 8×11 baking dish and form the loaf so it doesn’t touch the sides of the dish.
  3. 3Mix together the remaining ingredients for the topping. It should have the consistency of a thick barbecue sauce. Pour on top of meatloaf.
  4. 4Bake for 45 minutes, or until the internal temperature hits 170. You can form these into smaller, individual loaves for a shorter cooking time.
  5. 5Remove from oven and let it rest, covered, for at least 10 minutes before serving. Don’t worry, it will be plenty hot.
