Roasted Cauliflower with Tahini and Goji Berries

Baba Cool’s roasted cauliflower with tahini and goji berries is no exception, offering the perfect balance between sweet and salty while honoring the smokiness of roasting-induced char and spicy turmeric.

- 1 cauliflower, chopped
- 2 tablespoons coconut oil
- 1 tablespoon fresh turmeric, zested
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon plain Tahini
- 2 tablespoons goji berries, rehydrated
1Pre-heat oven to 400°F.
2Place cauliflower on sheet pan and cover with foil.
3Poke holes in foil.
4Roast for 20 minutes. Remove from oven and mix cauliflower.
5Cover with foil again and poke holes.
6Roast for another two minutes.
7Place goji berries in water and let soak for 20 minutes (do ahead of time).
8Sprinkle goji berries & drizzle tahini on top.
