To make perfect soft-boiled eggs, all you need are a saucepan, water, and—just as crucial as the eggs!—a timer. Since this is such a simple dish, use the best eggs you can find—we prefer organic, free-range eggs from the farmers’ market. Serve these in classic fashion, with buttered toast points for dipping.

Instructions

  1. 1Place the eggs in a saucepan and fill with enough cold water to cover. Bring the water to a boil, uncovered, over medium-high heat.
  2. 2As soon as the water comes to a boil, turn off the heat and cover the pan; let sit for 1 1/2 minutes (be sure to use a timer!).
  3. 3Remove the eggs with a slotted spoon and run under cold water for 1 minute.
  4. 4Set each egg in an egg cup, narrow sides up—or make one using uncooked rice or small dried beans in the bottom of a custard cup or small bowl.
  5. 5To remove the top, use an egg cutter, or gently crack the shell all the way around the narrow end with a small knife.
