Eggplant Soup

Ingredients (5)

  • 2 Eggplant
  • 2 Tbsp tahini
  • 1 onion
  • 1 cup finally chopped mushrooms
  • 2 cups vegetable stock

Serve cold for a nice summer treat.


  1. 1Roast eggplant
  2. 2saute onions and mushrooms
  3. 3scoop out eggplant flesh and add to onion mixture
  4. 4add vegetable stock and puree with stick blender
  5. 5chill for 2 hours
