Blueberry and Banana Bread Overnight Oats

This recipe for Blueberry and Banana Bread oats is simple, healthy, and vegan! You can prepare them the night before in a lidded jar and feel a little better about hitting that snooze button a couple more times. Coming from Anthea Cheng’s cookbook “Incredible Plant-Based Desserts: Colorful Vegan Cakes, Cookies, Tarts, and Other Epic Delights”, the recipe is one of three ways to make delicious overnight oats in three easy steps for a healthy and delicious breakfast!

Instructions

  1. 1The night before, combine the milk, oats, and chia seeds in a lidded container or large jar.
  2. 2For the blueberry and banana oats, mash the banana, and mix it into the oats with the cinnamon.
  3. 3Store in the fridge overnight. The next morning, mix the oats again to ensure everything is evenly distributed. Arrange the oats and the remaining ingredients in 2 bowls or jars. Enjoy!
