Zuni's Hanger Steak with Porcini Peara Sauce

Thinking of making this dish which is basically grilled hanger steak with a porcini, marrow, beef stock and breadcrumb sauce. The picture in the book is mouth-watering. Has anyone tried it? Any tips? What do you think about subbing flank steak? Thanks!
