Zuni Cafe cookbook beef stock

I love Judy Rodgers' recipe for chicken stock and wanted to see if her beef stock recipe was equally good. However, I see that she calls for 4 cups of chicken stock to make beef stock. I don't doubt that this makes a flavorful and rich beef stock, but I have a hard time using my precious chicken stock to make more stock. Has anyone tried making her beef stock using nothing but cold water as the liquid?
