Zankou: consistent quality issues

i LOVE zankou. that said, i've been noticing more and more variation in their chicken schwarma sandwiches. It's heaven when it's perfect, but when it's not it's either a gloopy, soppy, greasy mess with too many tomoatoes or the chicken is too dry and there's not enough garlic. maybe i just eat there too much. anyone have any comments. is there a special way i should order it? my experience is exclusively with the hollywood location. thanks!
