best yu kwe?

I know Sa rit gol's, Da rae ok's and Shin Jung's. Sa rit gol uses quail egg but it is often icy, Da rae ok's I just tried once and it was topped with a chicken egg. It was pretty good but the pa jun was execrable. There and at Shin Jung it includes a lot of potato salad. Shin Jung has huge portions but again like a block of ice in the middle. Is there anywhere that does not pre-cut meat and that may use han woo or other high quality beef? I would also appreciate recommendations in Seoul, Pusan and Taegu (so much do I love this dish).

fyi yu kwe (sp) is a kind of thick-cut beef tartare with sesame oil, scallion korean pear and raw egg, usually quail. There may be other variations but this is the only one I know.
