Shared the red snapper with the family tonight and added on spicy roasted broccoli with apricot and almonds, the mixed cheese and meats plate, shishito peppers, and deviled eggs.
The red snapper was awesome. A whole 5-pound scored + roasted Red Snapper (caught off the coast of Mexico two days previous) stuffed with spinach-garlic dressing, wood-roasted lemon, white wine buerre blanc, served whole on a huge platter of white rice. Deboned except for the head and tail. Moist and flavorful and delicious!
A really fun meal for 6-8 people.
