Winter Tomato Sauce

When making a winter tomato sauce (ie, a tomato sauce made from canned tomatoes) does it matter whether you use whole tomatoes, diced tomatoes, or any other form? I understand not using stewed tomatoes (different flavor) or tomato puree (different texture) but I've always wondered why recipes specify whole when you're cooking them down and breaking them up anyway.
