What does everyone make for a weeknight dinner? I'm curious about how much time people spend on making weeknight dinners and what their expectations are.
Gourmet dining or just something to fill your bellies before preparing for work the next day?
Since my hubby doesn't cook at *all* except for boiling water for ravioli, I cook 5-6 nights a week. I try to keep cooking times down to less than an hour during the week.
Some example meals I've made in the past few weeks include: grilled swordfish with mashed potatoes ( the potatoes were boiled in a pressure cooker so it took me 15 minutes tops to make the mashed potatoes), biscuit topped pot pie (yes, I used Bisquick but I've made home made biscuit topping which really doesn't take that much longer ) and tonight I'll probably make a small stir-fry and Vietnamese Caramelized Pork in a clay pot with some rice.
