Sounds like a worthwhile endeavor. Ooba's in Redmond (I know, I know!) has a great & varied menu of foods, but what I always remember is the minted rice.

There's a local chain called Taqueria Guayamos and it seems that the funkier they are, the better the food is. Try the one in Lynnwood on 196th St, a true hole-in-the-wall, but worth the long drive up Hiway 99.
