There is a fabulous Vietnamese restaurant near where I live called LaDalat. The food is sublime, my two favorites the first being the ginger/scallion chicken that they make to the perfect level of spice with tons of ginger, sweet onion and scallions and the second being what they call their "House Specialty Rice Pot". It comes in a metal rice pot, much like you would find in an Asian food supply house, and it is rice chock full of Vietnamese sausage, peas, carrots and I think onion. The spice is subtle but very flavorful. I think the rice may be cooked first in the pot and then the rest of the ingredients stirred in before baking because the peas and carrots are still a bright natural color, not dull as if they had been boiled in with the rice.
Anyway I have googled and checked various websites and cannot find any recipes that comes close to this. I have called the restaurant but each time I have called the person I spoke to didn't understand and/or wasnt able to communicate in English. Does anyone know a good site or have a good recipe they would be willing to share? I would love to try my hand at it. My few attempts to replicate this myself have been edible but not quite right.
