I know that fish sauce in Thailand and Vietnam are made with anchovies. Some people like the Thai fish sauce with the brand "Squid" saying that they are better and more expensive.
Is there such a thing as fish sauce made from squid??? (not the barnd name of a fish sauce). I have never heard of such a thing but during a post exchange at a travle site this is what I saw: "... a tv show (Andrew Zimmern) in which he visited a fish sauce factory in Cat Ba and then had a tasting in a restaurant (I think it was in Haiphong). And after tasting, he commented that the finest, lightest fish sauces use squid and not anchovies."
I am no expert in fish sauce - I only use them occassionally in cooking. Can this Andrew Zimmem be wrong?????
