Vegetarian Entree to Accompany Latkes?

We have a dairy kitchen and usually do fish as a main course -- if only to save ourselves from eating an insane quantity of latkes. (I'm thrilled to eat brisket or chicken with latkes at other people's houses; we're just not set up to do it at mine.)

But for one of the big meals, we have a true vegetarian coming over for latkes, so even fish is out.

What's a good protein-based entree that's easy and hearty and seasonal?

Any ideas? Please don't tell me acorn squash stuffed with quinoa or something like that. I just don't see it.

Might do a veggie 'meat' loaf, but thought I'd see what other ideas are out there...
