A vegan in a fancy San Francisco restaurant?

How would a vegan fare at Restaurant Michael Mina, La Folie, Fleur de Lys, Gary Danko or another of San Francisco's disgustingly fancy restaurants? Do you have experience getting the cooks at such places to accomodate difficult eaters? Masa's served this picky diner a vegan meal last year but it was not great. (And the sommelier had no idea how to pronounce the names of French and German wines, which did not inspire confidence. Still, the wines he recommended proved divine.)
