Fresh from a short convention trip to Vancouver, let me highly recommend two places:
NU, in the Granville Island area. Almost freaked out when I walked up to the door and saw "Naked + Casual Cuisine," but was so glad later we went in the door. Funky decor, terrific bartender, and the food was out of this world - traditional with a fun twist. Had the celery root and walnut salad (think Waldorf,) scallop ceviche that literally melted in my mouth, a lovely composed seafood salad, and for dessert, oh my! Two of us shared the petit four tray, replete with dainty, warm lemon madelines, and other tasty tidbits. If you like Mojitos, try their Junkanoo!
CinCin - downtown (a sister restaurant to West.) Mediterrean cuisine. Four of us had the "new world" tasting dinner, and I just cannot tell you how delicious it was. Proscuitto and cheese wrapped around a tender bit of poached pear on a balsamic vinegar reduction; crab timbale; freshly foraged mushrooms with asparagus; barely seared halibut; rare medallions of buffalo sirloin; strawberry sables, and again, a petit four tray. Let them help you choose the wines (mostly BC) to add to the dinner.
The only BAD thing about these two meals was having them back to back - too hard to choose between them!
