'use by' dates and freezing

Suppose one properly freezes a package of bacon (or hotdogs or whatever) one month before the expiration date printed on it, then several months later, properly thaws it. Can you count on having about that same one month time to safely consume the product after thawing? I usually break it down into single or double serving sizes before freezing so I can avoid that worry, but sometimes I get lazy and throw the whole thing in there. Any rules of thumb?
