UPDATE on "Wine upselling? or am I being picky?"

I have had several pleasant and professional back-and-forth exchanges with the chef and feel the situation has been satisfactorily resolved. He apologized for our experience, met with the manager this afternoon to discuss this and invited us to return as his guests. No one can ask for more than he has offered and my hat is off to him for his care and willingness to listen.
