Unique, off-beat restaurant for a special bday dinner

My dad has a big birthday this week and I'd like to take him someplace special to celebrate, just the two of us. Someplace nice, and unique / unusual. In Paris, we went to a restaurant specializing in offal and we thought that was a great experience. We got to try a lot of new things, but it was also delicious. (What I mean is, it wasn't unusual and weird just for the sake of being different or showy. The flavors were rich and abundant as well.)

I'd like to find someplace like that in Manhattan for my dad's birthday this week. Someone suggested WD-50; anyone have any reviews for that? Or Bluehill Farm? (Ideally, I'd like to keep it around $100 per person.)

Anybody got any ideas? If not unique / unusual, then I'd welcome suggestions for nice French restaurants as well!
