help me understand japanese food

I always crave japanese food during the summer, owing to it's fresh taste and saltiness (something I crave in hot weather).

But I don't feel like I really understand the the food the way I (sort of) do southern Italian or Cantonese, and I'd like to. So if anyone has any thoughts (or web site suggestions) on the following, I'd love to hear them:

what are the staples of a japanese kitchen (both pantry and refrigerator).

what are some of the best/most typical home made japanese dishes?

What are some of the more complicated dishes, particularly those centered around holidays?

and so on.
