The ultimate searing pan - your choice

I cook on gas and want the best searing pan money can buy in respectively 28cm and 24cm.

By searing I mean a pan that is stationary on the stovetop searing at high heat. This is NOT a pan for sautéing vegetables. This is going to be a dedicated steak pan and nothing else.

Already own Demeyere Pawson 7-PLY in 28cm and 24cm.

Cast iron and carbon steel are not an option as I deglaze in wine/balsamico and wash my pans thoroughly afterwards.

Would Falk 2.5 copper frying pans be an improvement ?
