Ugly Delicious, Season 1 (Netflix, David Chang)

saregama | Mar 11, 201807:29 PM

Are you watching Ugly Delicious? Love him or hate him, David Chang makes you think.

The debate around what’s “authentic” reminded me of a discussion on last month’s DOTM Biryani thread on authenticity. What’s “authentic”? A flavor profile, a recipe, or a method? Who decides? Where did something originate? Is it possible to be “authentic” without the “original” ingredients?

There’s a lot of food for thought across the season - I’m not sure how best to do this, but here’s a stab at organizing the discussion:

Let’s reply under each episode if it’s related to that episode, and to the main thread if it’s a broader point relevant to the entire season.

Episode list:
1: Pizza
2: Tacos
3: Home Cooking
4: Shrimp & Crawfish
5: Barbecue
6: Fried Chicken
7: Fried Rice
8: Stuffed
