The debate around what’s “authentic” reminded me of a discussion on last month’s DOTM Biryani thread on authenticity. What’s “authentic”? A flavor profile, a recipe, or a method? Who decides? Where did something originate? Is it possible to be “authentic” without the “original” ingredients?
There’s a lot of food for thought across the season - I’m not sure how best to do this, but here’s a stab at organizing the discussion:
