In short, I have to bring a 20lb bird to my kids school for a thanksgiving party. I knew I was starting it early....way early...but you know, better safe than sorry. Anyway, I roasted this thing breast side down for 1/2 the time and then flipped it. It really looked quite beautiful when I pulled it out...but I digress. I pulled the bird out with the breast at 155ish F at around 840am. It doesnt go to the school till 10:30. I ended up flipping the bird back over (breast side down) and placed it on a rack inside my turkey pot and put the lid back on. What do you guys think? Will this thing be ice cold at 1030? Will it be super dry? Thoughts?
