turkey for Lunar New Year?

I have a mom who, whenever she visits from Asia, brings with her goodies that she would then use in her elaborate cooking during her stay. You know, stuff like dried scallops, shitake mushrooms, dried longans, dried shrimps, dehydrated sea cucumbers, bamboo pith, etc. Of course she never uses nearly as much as she brings so things accumulate in my freezer. There are bags upon bags of these things. I need major help to use them up as they are taking two full shelves in my already cramped freezer.

I also have thawing in the refrigerator a 12lb turkey. Can I cook up something worthy of a Lunar New Year celebration with what I already have? There are also chinese sausages and a complete chinese pantry.
