Turkey day in Baghdad--thanks!

I just wanted to send out a big thank you to all you folks who helped calm my nerves over Thanksgiving. It ended up being a HUGE success--two turkeys, stuffing, garlic mashed potatoes, veggies, gravy, and cranberries. We had about 50 guests since everyone was hankering for a nice holiday meal, but everyone got to eat, loved the food, and had a good time. I'm just delighted since I'd never done Thanksgiving before and was cooking under slightly "different" circumstances than I'm used to. (I'll never forget humming along to gunfire while chopping celery in candlelight after the power went out.)

All the food turned out surprisingly good. Our itty bitty oven came through like a pro, and the turkeys came out moist and flavorful, even with no thermometer. One of my roommates took on potato mashing duties (with a spatula, in case you ever need to improvise) since she prefers the more aggressive parts of cooking. And thank goodness, the water and power stayed on through the whole party.

I'm amazed it all came out so well. You guys gave me more than good recipes, you gave me the confidence that I could pull it off.
