While stationed more than 20 years ago at Hanscom Air Force Base, I had so many tuna subs from Steve's House of Pizza in nearby Bedford, Massachusetts, that my boss told me I'd soon grow gills. Leaving Massachusetts in 1979, I pined for those subs for over 20 years; could a simple tuna sub really have been as good as my taste buds remembered it be. Thankfully I had the opportunity to re-visit Steve's in 1999 and validated that they were even better than my memories. Best of all, I shared Steve's wonderful tuna subs with my wife Kim who was equally captivated by the amazing things the Greek proprietors could do with simple tuna. Upon returning to New Mexico, Kim called Steve's crew and was given their recipe for the marvelous subs. We've been unable to duplicate the magic, but have made better tuna subs than we used to.
