Trouble using less oil

I recently started Weight Watchers and one of the biggest problems I'm running into is how little oil I feel like I can use and stay within my points. Measuring oil has definitely caused me to realize how little 1/2T of oil is. When I restrict the amount of oil I use, I'm finding it difficult to have my food cook properly. It blackens too soon without actually being cooked through, etc. When I roasted brussels sprouts last night, I decided to just go ahead and use my normal 1T per 1/2 pound...and when I entered it into my WW tracker, I was horrified that the recipe (containing no other fat except that 1T of oil!) came out to 8 points.

I would appreciate tips on how to effectively use a limited quantity of oil, as well as thoughts on things like using cooking spray instead of oil.
