Tripe

Wasn't somebody looking for nice tripe a while back on the Chicago board? I thought of that today when I saw gorgeous beef tripe, two kinds, looked like Honeycomb and Plain, at Bobak's on South Archer. Also they had a lot of it out so presumably they expect to sell a lot, a good sign that it's fresh. My first trip to Bobak's. Wow. The mother lode for all things Slavic. Many-many kinds of sausage and smoked meats, fresh sauerkraut, frozen pierogis, boneless pork chops run through the cubing machine (they make luscious sandwiches as they're so tender they fall apart when you bite into them), quarts of Polish soups, interesting deli, paczis in several sizes. Their sausage factory is behind the parking lot---meat products are homemade. There are also a small hot buffet and tables. Meat prices seemed to me very low. If you drive, no problem. If you don't, the Orange Line to Pulaski then the 62 Archer bus for about five minutes will take you there fast.
