Before moving the SF Bay area (from Florida) 3 years ago, I never heard of tri-tip. Is that because it is only sold in the west, or is it a new cut? And what is it actually? I have had beef tri-tip but saw pork in Albertson's yesterday. Can someone help this ignorant meat buyer? Thanks.
