I bought several free range sirloin steaks that went into the freezer. The first we ate a few weeks ago tasted great, but were really tough. I usually pan sear and then finish in the oven, but these aren't very thick so the oven isn't really necessary.
Anything I can do to make them more tender? I have one of those "nail" gadgets for tenderizing, but have not ever felt the need to use it on steaks before, but I usually buy ribeyes from the same farm and they are tender. I think these sirloins are too lean.
Should I try marinating them? Never have done this with good steaks either, but I'm up for whatever might help.
