I've only had the pleasure of eating at Totto Ramen once. The ramen was very good, the broth creamy, salty, and very savory. However, the hot sauce was what I remember most. It was not too spicy, had great texture and crunch, and would pair well with so many rice and noodle dishes.
Does anybody have any idea how to make this hot sauce? I know that it starts with a sesame oil base, and it has a lot of garlic and onions/scallions. The texture comes from a lot of fried or dried bits, whether that's fried garlic or onion I don't know.
Any ideas? Would truly love a chance to try this again (not from NYC).
