During the past month or so, I have purchased several boxes of terrific tomatoes ($7.00 this week for a 25-pound box at Latham's Farm Stand, Orient). I have already made lots of roasted tomatoes and eaten dozens of great salads and given away many to friends. Breakfast today was a wedge of feta, an egg and a sliced tomato!! Any ideas as to other uses I can put to those that remain; they are at the peak of ripeness and I don't want them to get moldy. I am not too keen on making sauce since I usually find that canned ones are better for that purpose. Also, any tips on roasting and freezing the next box that I buy would be welcome. Thanks.
