I've had great luck with a chocolate mousse made with tofu and no eggs. A friend's wife a work gave it to me and it's delicious. Has anybody made tofu mousses from fruits or other flavorings?
I was thinking about my canteloupe glut and suddenly remembered the tofu mousse. I'm going to try it tonight. I think the chocolate one works well because it has lots of grated orange peel in it. Maybe canteloupe is strong enough, flavor-wise to succeed. I'll let you know.
