Since the demise of Tindo, I have been searching for a Shrimp Egg Scramble over rice. I've ordered this dish in Flushing, Elmhurst, Brooklyn, and all over Chinatown and none of them have come close.
This afternoon I struck gold. Potluck, a new place on Grand and Forsyth (sp?), served me an EXACT replica of Tindo's dish. Same taste and texture, same size and number of shrimp; same wok-tasting browned edges.
In addition, the tea was the same tea as Tindo, and the menu contained many similar items: Short ribs with Pepper and Black bean sauce, clams any style, Peking-style pork chops, Crispy Shrimp with Walnuts and "salad sauce", pork with preserved vegetable, etc.
How does one ask "Is your chef a tall crazy guy with long red and/or green hair" in Cantonese?
Unlikely, but you never know...
