First Time with Orange Roughy

I bought two large filets of orange roughy from Trader Joe's.

I've found a few ways of preparing them, but thought I'd check by with you all for suggestions.

I'll need to defrost them, but don't know for how long.

The only preparation I can't feasibly do is grill, but broiling, baking or pan frying works fine.

Also, I'm on a low cal/low fat diet, so I'd prefer if the recipe helped keep with this.

I'd also prefer not to run back to the grocery store, so the least amount of ingredients and prep time is preferred. I do have a decent spice rack and some extras like oranges and lemons lying around.

Now that I have all of the stipulations out of the way, do you have any recipes?
