Just wondering if I have doomed my family to gastro-intestinal distress for the holiday and a night of mushy, skinless white bean soup by failing to soak the beans first.
In order to have an easy meal ready for tonight so that I could focus on the larger Thanksgiving task at hand, I threw together a recipe: sauteéd onions, celery, garlic, bacon, bay leaf, fresh thyme, ham hock, stock. I then threw in rinsed, unsoaked white beans into the dutch oven without thinking and brought it all to a simmer. I popped it in the oven for slow-cooking at 275 degrees and said, "OH NO! I forgot to soak first!" I've still got some gorgeous kale to finish the soup with and intend to pureé part of it. It smells delicious, but is all lost?
Darn that cranberry sauce and pie dough pulsing for distracting me! Not a good idea to cook 3 things at once unless you're exceptionally cool-headed.
Any advice or experience is greatly appreciated.
