Two 9-lb turkeys, or one 18-lb turkey?
In a perfect world, I'd have two smaller ones for all kinds of reasons (a lot mentioned in a post from yesterday).
Alas, my apartment oven is too small to use to roast two birds at once.
Does anyone have any clever suggestions? There's no way for me to cook one the day before, is there? I don't even mind (too much) if I need to deconstruct one, but I don't see how that would help.
