Texas CH needs LA/Laguna help

Making a spur of the moment trip (to get out of this god awful heat). Will spend 2-3 nights in LA area and 2-3 nights in Laguna. Need food recs and LA hotel advice. On short notice the only places I could find that fit our criteria in LA area (balcony with ocean view under $400 night) were the Beach House at Hermosa Beach or Hotel Oceana in Santa Monica. Would one be decidedly better than the other? Or would you suggest something else entirely?

Will have a car so driving is no problem. Below is some of what I’m looking for along with what I’ve found on this board – maybe ya’ll can help narrow these down or suggest something else:

Good fresh seafood – Quality Seafood, Malibu Seafood, Joe’s, Lobster, Bluewater Grill.

Sushi – (For this I need a place that also serves good rolls and/or fusion type stuff as my traveling/dining companion is not fond of straight up sushi/sashimi. She will eat raw fish but it needs to be dressed up (disguised) a little) – Tama Sushi, Matsuhisa, Kiriko, Hump, Wa Sushi

Thai – I think I remember a thread on the SW board about Lotus of Siam in Las Vegas where some LA hounds were saying it was not as good as LA Thai restaurants. Any superior recs for Thai?

Upscale spots – Would like to have a couple of choices for fine dining places. Does Spago still qualify? Campanile, Josie, Beacon, AOC,? Leaning to AOC….

Tacos Baja Encenada for fish tacos? Never been to In-N-Out Burger – worth trying?

I got nothing for Laguna so any recs in that area would be welcome…
