For the past several years swordfish has been very unreliable. The problem seems to be getting more frequent. Although the fish looks and smells OK, it has a mushy texture and very little flavor when cooked. The owner of a local fish market told me it is because they are being taken from waters that would not have been fished several years ago. Has anybody noticed this problem and have any ideas why it is happening?
